Yes, you are very right that we also have free will and we can choose what we desire to do. It is surely up to a person to choose if he wants to eat non-veg or not. Unlike some other vegetarians, I do not think eating meat is wrong or disrespectful.

Let’s put it in a simple fashion.
Man can hunt and kill.
Meat eaters can hunt and kill.
Meat eaters survive on meat, men can too.
However, men who like meat do not eat for a logical reason of can or can not. Because they like it. It is like hunting. An instinct older than religion, as Hemingway put it.
There are people Including Vivekanand who justify eating meat (page 482-483 vol 5 complete lectures). But to keep it simple, eat meat if you have a desire. Don’t if you do not have one. Somewhat like sex, except a goat could be involved.
